Danish chef Esben Holmboe Bang’s cuisine centers on the fresh and bright flavors of Norway, which he now calls home. Using organic, wild and biodynamic products, his dishes are simple, layered and sometimes repulsive. In addition to running Maaemo, the only three-Michelin-starred Norwegian restaurant, Bang, based in Oslo, opened a space in Shenzen in 2019 and a beautiful brewery called The Vandelay at the end of 2020. Here he tells us about jazz in the morning, by the way. sifting through the weekend papers and why he likes to start his Sundays early.

Where do we find you this weekend?
Saturdays are spent in my restaurant but on Sundays I am usually at home with the family – in the garden, weather permitting.

What is the ideal start to a Sunday? Soft start or jump?
I always start my days early. It may be a soft start, but it has to start.

Soundtrack of choice?
I put on some jazz records early in the morning. Then I move on to talk radio.

What’s for breakfast?
Eggs and maybe some pastries. I’m not the type to have big and sweet breakfasts, so I prefer to have something hot and salty. Toast with good cheese is my favorite.

News or not?
Certainly news. I like to sift through the weekend papers.

A little exercise to keep the blood flowing?
Sunday is actually the only day I don’t exercise; I wake up early and see where the day is taking me.

Have lunch inside or outside?
Certainly in.

Pantry essentials that you can’t do without?
Very good cheese, butter, eggs and sourdough bread. Oh, and oats for the porridge. I love porridge.

Unmissable Sunday culture?
I like to keep up to date with the news by listening to the radio in the afternoon. Then the music. Movies are also always a welcome addition.

Walk the dog or downhill dog?
Maybe a bit of both.

A glass of anything you would recommend?
Plenty of water and good coffee. If it’s dinner time, a white burgundy.

Perfect place to dine?
Home. Preferably with family and friends.

The ideal menu for dinner?
A whole roasted chicken with roasted potatoes and a green salad – the perfect Sunday treat.
